Vanillekipferl – Monde

In standmixer pot
first whisk all dry ingredients together

500g spelt flour
200g ground Hazelnuts (RedMill Hazelnut flour)
285g sugar
whisk together, then add

340g butter (at room temperature – should be pretty soft)
3 eggs
juice and skin of one lemon
3 TBSP vanilla

with bread hook
mix 5 minutes, speed 5 (difficult, when butter is too hard)

needs some manual remixing to combine everything well

cover, put in fridge for an hour

preheat oven to convect 360 F

Use baking sheets with paper, not the silicone mats !!!

form moons on 2 sheets, but bake them individually
for 18 minutes

when they are ready, use sieve and put pouder sugar on top, lift edges of paper to
‘flip’ them around and pouder also the bottom sides
