Ingredients
3 eggs
2 large beets
10 small or 4 large potatoes
2 carrots
1 can of chickpeas
1 celery stalk
1/2 red onion
cilantro or parsley
veganese
apple cider vinegar
olive oil
salt, pepper

boil 3 eggs for 10 minutes, let cool
peel, cut beets, potatoes and carrots
cook for 4 minutes in pressure cooker with some veggi broth
cut celery stalk very finely
cut cilantro
cut 1/2 onion
drain chickpeas
cut eggs
cut cooked potatoes, beets and carrots in smaller pieces

3 TBS olive oil
3 TBS veganese
1/2 tea minced garlic
1 TBSĀ apple cider vinegar
salt, pepper
Mix all ingredients in large bowl, cover and put in fridge to let flavors mix
