black beans (Monica)

wash 1 pound of beans
put in cast iron covered with water
boil, switch off, dump water

add again cold water, twice the amount of beans

add about 1/2 cup of
chopped onion
chopped pepper
chopped green onion
2 garlic

pepper,
little salt,
adobo

simmer for about 1 hour, low heat
check the softness
don’t dump the liquid

freeze individually

Monica does not put much salt in the first step to let them soften better
but she wants them to have some taste to use them in salads etc.

after thawing

saute

1 onion
1 1/2 pepper
3 garlic
green onion

add to the bean, cook at medium heat for 20 minutes
dependent on the consistency
