20 g Backferment (4 Tablespoons)
220ml spring water (at 40 Celsius)
mix well in small recipient
warm up the metal mixing bowl with warm water and dry it
pour in the mix and add 200g spelt flour, mix for a while
cover with plastic and put for 12-18 hours into the oven
(switch on the oven light and put the 40Watt light bulp)
The temperature should be 28-30 Celsius
